Somebody's Dinner

I love chewy peanut butter granola bars and so have been experimenting with some recipes.
I was looking for ones with lots of protein, whole grains, and inexpensive ingredients. I adapted and tried several recipes until I came up with this one. It is kind of messy, but delicious. These are very thick -- I usually slice them into squares instead...

I've been making these egg rolls for over a year now and everyone always really likes them, despite the fact that they are baked instead of deep fried.
If I want the recipe to be easier, I buy a bag of shredded cabbage. I like to pair them with microwave sweet and sour sauce....

I like this recipe with my baked egg rolls. This sauce is so simple and yummy. It's also good on rice or chicken.

I got a vegetable spiralizer tool, which is a lot of fun. Cucumbers and zucchini are my favorite vegetables to make into spirals. If you don't own one, this salad is also yummy with cucumber half circles.
The dressing on this salad has apple cider vinegar and lemon juice in it. You would think it would be acidic and tart, but it is really mild and flavorful. Just make sure you don't put too much raw onion in the salad -- a mistake I have made. I love...
