Could not get rid of the error message in the logs with the manual deletion of the folders after all. So on my VM, where I had force unmounted the snapshot once, every log now contains this line:

Just a quick update, been testing this a bit now (also arm64; M1 Max Macbook) and so far:
Snapshot mounting and backuping works great!
Backing up OneDrive-Folder now also works -
